Food Microbiology Testing
Define food matrix, lot, target organism and decision. Salmonella and Listeria detection often use enrichment and confirmation; E. coli/coliform and aerobic plate counts answer different questions. FDA BAM, AOAC and ISO procedures must be selected for the organism and matrix, not as interchangeable labels.
Agree sample portion and sampling plan, transport temperature, collection time and holding requirements with the receiving laboratory. A negative subsample does not prove the whole lot pathogen-free; distinguish presumptive molecular screening from confirmed findings and quantitative counts.
Shelf-life work needs storage conditions, time points, microbiological endpoints and product-specific interpretation. Do not perform pathogen challenge studies at home; use qualified facilities with containment and validated protocols. Food-contact packaging migration is a separate chemical/use-condition assessment.
